Better Kombucha that Breaks the Rules

Partners Philippe Trinh and Julian Lesser followed their passion to create an all-natural Kombucha that was low in sugar and tasted great. The result is Seek North Provisions, a small batch organic Kombucha company based out of Kingston, New York in the heart of the Hudson Valley.

It took the couple a few years of kitchen alchemy and flavor experimentation to develop their gut healthy line that was first carried on tap at the upmarket retailer, Dean & DeLuca in early 2018. Innovative and tantalizing flavor combinations like Pineapple Elderflower, Hibiscus Ginger, and Blueberry Pomegranate Lemon generated booch buzz and created a devoted fan base.  On January 1, 2019, these fan-favorite flavors became available in single-serve bottles at all New York Dean & DeLuca locations. In addition, the company also debuted two new flavors on-tap: Passion Fruit and Apple Ginger.

“It was important to us that our Kombucha be raw, unfiltered, and unpasteurized to maintain all of the natural health benefits,” said Julian, who leads brand development and distribution. “I wanted to create badass ‘booch’ with fun flavors that tastes great without using artificial sweeteners, fillers, or synthetic flavors,” remarked Philippe the Booch Master.  Because they don’t cut corners, Seek North Kombucha is Certified Organic and lower in sugars than other brands.

The intrepid NYC couple are accidental country boys. Philippe, an accomplished fashion designer, and Julian, an artist and a digital media specialist fell in love with the Hudson Valley in 2012 after they lovingly restored a neglected 1890’s Victorian home in the Historic Stockade District of Uptown Kingston. Their newest venture is a 55-acre farm in the NY Catskills region where they aim to grow organic ingredients for their expanding kombucha enterprise.  

The couple’s commitment to health and the environment took on a whole new meaning in 2016 when Julian was diagnosed with neurological Lyme disease, a debilitating and commonly misdiagnosed disease that affects an estimated 300,000 people each year. Realizing that 70-80% of immune tissue lies within their digestive tract, they decided to get serious about gut health. Facing one of the most frightening periods in their lives, they chose to jump start both their bodies and health, together.  As a result, the couple will donate a portion of all Seek North Kombucha sales to local non-profit organizations focused on Lyme disease advocacy, education and research.
